Характеристика на студено пресован продукт от Coriandrum sativum L. с перспективи за приложение

Абстракт

Направена е количествена и качествена характеристика на студено пресован екстракт от кориандър, който представлява съчетание от етерично и глицеридно масло в съотношение 5:95. Сравнен с останалите „Green“ - технологии, методът на получаване се отличава с простота, ефективност (добив 5.00 ± 0.09%) и запазване натуралитета на суровината в максимална степен. Летливата част на продукта се състои основно от линалол (69.7%), а нелетливата – от ненаситени мастни киселини, като олеинова (С18:1) - 80% и линолова (С18:2) - 14%. Съставът му го прави директно приложим в изделия за хранително - вкусовата промишленост.
